Hearty Vegetarian Soy Sauce Ramen

Loaded with flavorful toppings! I used garlic chives instead of green onions since I didn’t have any on hand. For the photo, I put the toppings at the bottom and the noodles on top.

I wanted to make a comforting, easy-to-eat soup with lots of toppings to help my family recover from illness. As I improvised, it turned into a Chinese-style broth and transformed beautifully into a vegetarian ramen!

Ingredients

Serves about 2 servings
  1. 3 1/3 cupskombu broth (about 800 ml) or water
  2. 1 clovegarlic (sliced)
  3. 1 pieceginger (grated)
  4. 1/2 tablespoonbeet sugar
  5. 1/2 tablespoonsake (Japanese rice wine)
  6. About 1 tablespoon mirin (sweet rice wine)
  7. 3 tablespoonssoy sauce
  8. 1/2 teaspoonshio koji (optional)
  9. 2 tablespoonsground sesame seeds
  10. ● Toppings of your choice
  11. 1/2carrot and 1/2 onion (julienned with a slicer or knife)
  12. About 2 leaves cabbage (shredded, cut as you like)
  13. About 1/3 bunch garlic chives (cut into 2-inch pieces)
  14. About 1/2 block firm tofu or fried tofu (blanched to remove oil)
  15. 1 tablespoontoasted sesame oil (for finishing)
  16. Noodles for 2 servings (such as somen or ramen noodles, your choice)

Steps

  1. 1

    Bring the broth to a boil. Add the garlic and ginger, then add the remaining seasonings. Let it come to a gentle boil.

  2. 2

    Add your prepared toppings and simmer. (Finish by adding the sesame oil.)

  3. 3

    Meanwhile, bring a separate pot of water to a boil and cook the noodles according to the package instructions.

  4. 4

    Once the noodles are cooked, transfer them to serving bowls. Pour the hearty soup with toppings over the noodles and serve!
