I wanted to make a comforting, easy-to-eat soup with lots of toppings to help my family recover from illness. As I improvised, it turned into a Chinese-style broth and transformed beautifully into a vegetarian ramen!

Bring the broth to a boil. Add the garlic and ginger, then add the remaining seasonings. Let it come to a gentle boil.

Add your prepared toppings and simmer. (Finish by adding the sesame oil.)

Meanwhile, bring a separate pot of water to a boil and cook the noodles according to the package instructions.

Once the noodles are cooked, transfer them to serving bowls. Pour the hearty soup with toppings over the noodles and serve!
