Ingredients

  1. 1/2tilapia (about 14 oz), cleaned and scored diagonally
  2. Oil for frying
  3. 4-5 clovesgarlic, coarsely chopped
  4. 1 tablespoonfermented soybean paste (diluted with a little water)
  5. 1 cupjulienned ginger
  6. 2green onions
  7. 1 stalkcilantro
  8. Red chili for garnish
  9. 2 teaspoonssoy sauce
  10. 1 tablespoonoyster sauce
  11. 1 tablespoontamarind juice
  12. Coconut sugar, to taste
  13. 2 tablespoonsvegetable oil
  14. 5 tablespoonswater

Cooking Instructions

    Fry the fish in hot oil over medium heat until cooked through. Set aside.

    Coarsely chop the garlic, cut the green onions and cilantro into sections, and julienne the ginger. Set aside.

    Heat a pan and add vegetable oil. Once hot, add the garlic and fry until golden. Add the fermented soybean paste and ginger, stir-frying until fragrant.
