Fry the fish in hot oil over medium heat until cooked through. Set aside.

Coarsely chop the garlic, cut the green onions and cilantro into sections, and julienne the ginger. Set aside.

Heat a pan and add vegetable oil. Once hot, add the garlic and fry until golden. Add the fermented soybean paste and ginger, stir-frying until fragrant.

Add water and season with soy sauce, oyster sauce, tamarind juice, and coconut sugar. Taste and adjust seasoning. Add the green onions and cilantro, stir quickly 2-3 times, then turn off the heat.
