Soufflé Pancakes with Pancake Mix (Skillet)

By separating the egg yolk and egg white, you can make fluffy soufflé pancakes! If you don't have a skillet, you can use a regular frying pan. I wanted to try making fluffy soufflé pancakes with pancake mix, and since I bought a skillet, I decided to bake them in it!

Mix the egg yolk, milk, and vanilla extract together. Add the pancake mix and cinnamon, and stir until the batter is smooth with no lumps.

In a separate bowl, beat the egg white to make a meringue. Use a hand mixer, adding the sugar in two parts. Beat until stiff peaks form (about 80% stiff).

Add half of the meringue to the batter and gently fold with a spatula. When just combined and slightly marbled, add the rest of the meringue and fold in until incorporated.

Heat the skillet on the stove and melt the butter in it. Once the skillet is warm, pour in the batter.

Bake in a preheated oven at 410–430°F (210–220°C) for 10–15 minutes. Once baked and slightly cooled, top with powdered sugar, lemon, butter, or your favorite toppings.
