Cooking Instructions

Put the chicken knee cartilage in a plastic bag and season with salt and pepper. If you prefer a stronger flavor, add a bit more salt and pepper.

Add the garlic paste and soy sauce, then massage the bag well and let it sit for 15 minutes.

Add the potato starch to the bag and massage until evenly coated.

Fry slowly in medium-hot oil until done. I usually fry with a small amount of oil! Enjoy with lemon or mayonnaise if you like.
