Eforiro is a vegetable soup from the western part of Nigeria. Any typical Yoruba person that doesn't like this vegetable, please remove the typical and question the person's "Yorubaship".  I love this soup because for me it goes with anything... Yes I said anything! From plantain to yam, to solids, rice and even bread! I can't eat efo with bread... You can call me weird. But if you want to feel a perfect foodgasm, try this soup with smooth and fluffy amala. Thank me later. I talk too much! Now to the details...

Ingredients

4 servings
  1. Shoko (I dunno if it is called spinach or something else but that is what we call it)
  2. 5Pepper mix (tasashe/red bell and 5 pepper scotch bonnet)
  3. 1large Onions
  4. 1cksp Palm oil
  5. 1 tbspIru woro (locust beans)
  6. 2 cupsSmoked fish
  7. 2 cupsBeef
  8. 1 1/2Offals
  9. 2 cupsPomo (cow hide)
  10. to tasteSalt

Cooking Instructions

    Pick and wash the shoko. Then chop it. This vegetable has lots of water so you have to blanch it either with hot and cold water or wilt it without water by heating up a pot or pan and stirfrying the vegetables till it wilts and the water dries up. This method retains the green color and crunchiness of the vegetable.

    Boil and season the meats to your taste.

    Boil the roughly blended pepper

    After about 5-8mins of cooking and allowing the meats soak in enough pepper juice now add your blanched vegetables and stir in properly. Cover the pot and allow to simmer for 2mins on low heat so the vegetable doesn't over cook. And your Almighty eforiro is ready to be served.

    Heat up the palmoil in a pot, slightly fry the chopped onions and Iru. Then add the pepper. Allow to cook for some minutes before adding the boiled meats and smoked fish.
