As I've always said, in my opinion, chicken is easy to cook and everyone likes it.

Boil the chicken breast for about 30 minutes, skimming off the foam to get a clear broth. Add salt.

Clean the tomatoes and blend them with the chipotle peppers, garlic, and onion (use some broth to help). Blend until you get a smooth sauce. You can strain it if you like, but I prefer it with some texture.

Boil the potatoes from cold water, making sure not to overcook them, as we will add them to the sauce.

In a pot, add the oil along with the onion, let it sizzle, and then add the sauce.

Shred the chicken finely.

Add the chicken to the sauce along with the potatoes and let it cook for a few minutes. Adjust the salt.

You can serve it with refried beans.
