Mixing noodles is a nostalgic dish for me. In my family, everyone remembers my dad as the better cook, probably because he often made noodle dishes and other home-style meals. My mom, on the other hand, sometimes made some questionable dishes, haha! So when I eat alone, I really enjoy a simple bowl of noodles like this.

Chop the vegetables, chili pepper, and scallion greens.

Boil the chicken, then shred it into thin strips.

Boil the onion and noodles in water until cooked.

Heat oil in a pan, add the chopped scallion greens and chili pepper, season with a little salt, and stir-fry briefly.

Place the noodles and onions in a bowl, top with shredded chicken, drizzle with the scallion oil, and serve.
