Kaak Nakach (Algerian Date-Filled Cookies)

First, combine the sugar with the grated lemon and orange zest. Mix well, then add the mixture of orange blossom water and water. Mix again and cover.

In a separate bowl, mix the softened clarified butter, oil, and margarine until creamy. Gradually add the sifted flour, baking powder, and vanilla, mixing well. Then strain the orange blossom water and water mixture from the zest and add it to the dough. Mix until you get a soft dough. Weigh out 1.25 oz (35 grams) portions, cover, and let rest in the refrigerator.

Shape the filling into balls weighing about 0.4 oz (12 grams) each.

Roll each dough ball into a rectangle, place a log of date filling in the center, and seal well. Shape into small rings and place them in a special patterned mold or decorate with a patterned tool.

Freeze for 30 minutes or longer.

Bake at 350°F (180°C) on the lower rack until set, then brown the tops for about 20 minutes.
