Mixed Vegetable Tagine (No Oven Required)
A meat- and chicken-free recipe. Completely plant-based, made with easy, delicious, and readily available ingredients.

Cut the vegetables and prepare the rest of the ingredients.

Place a skillet over medium heat, add the oil, and sauté the onion until it softens. Add the garlic and stir.

Sauté the garlic with the onion and oil until fragrant, then add the vegetables.

Cook the vegetables with the onion and garlic, cover, and let them soften slightly.

Add the tomatoes and tomato paste, and stir with the vegetables.

Add the spices, stir, then add the dill and a sprinkle of chopped cilantro.

Sauté everything together, add about 1 cup (240 ml) of water, and salt to taste.

Cover and cook until the vegetables are tender, then transfer to a serving tagine dish.

Serve with bread or rice, as you prefer.
