Lo Mein Noodles!

An irresistible dish with the aroma of China, a little different from Greek cuisine but very delicious!
You can use any protein you like:
▫️Beef, pork, or turkey – slice thinly
▫️Ground meat – cook the onion and garlic first, then add the ground meat. Once cooked, add 1 tablespoon of sauce, stir, and continue with the next steps of the recipe.
▫️Firm tofu – cut into sticks about 1/2 x 1 1/2 inches (1 x 4 cm)
▫️Shrimp – use small, peeled shrimp
Or make it with vegetables (vegan version) – add an extra 2 1/2 cups (about 300 grams) of chopped vegetables.
▫️Lo Mein can be made with any type of noodles – thick, thin, fresh, dried, egg or rice noodles – or even ramen noodles, or spaghetti or other long pasta (trust me, no one will know)! 😉

For the sauce: Mix the cornstarch and soy sauce until smooth, then add the remaining sauce ingredients and stir to combine.

For the chicken: Slice the chicken into thin strips (if it’s partially frozen, it’s easier to slice thinly).

Place the sliced chicken in a bowl with 2 tablespoons of the prepared sauce. Toss to coat and set aside while you prepare the other ingredients.

Heat oil (olive oil or your preferred oil) in a wok or large heavy-bottomed skillet over medium-high heat. Add the onion and garlic and cook until slightly softened.

Add the chicken and stir until it turns white on the outside. Add the carrots and bell pepper(s), and cook until the vegetables are just tender or the chicken is cooked through. If you prefer the vegetables more tender, add an extra 1 cup or 3/4 cup water and cook until they reach your desired softness (taste to check).

Add the cooked noodles, the sauce, and 1/4 cup water. Use two wooden spoons to toss everything together well. Add the green onions (optional) and stir for another minute until the noodles are evenly coated with the sauce.

Serve immediately, garnished with extra sesame seeds and green onions if desired. Enjoy! 🥢
