Over low heat, sauté the white parts of the scallions until golden, then remove them from the pan.

Place chopped scallion greens and minced garlic in a bowl, then pour in the hot oil.

Add soy sauce, salt, and granulated sugar.

Add the cooked noodles and toss to combine. (Optional: Add tofu if desired.)
