Ingredients

25 minutes
2 serves
  1. 1 bowlfull of homemade sprouted Mung
  2. 500 mlwater to blanch the sprouts
  3. 1Onion
  4. 1 tbspcrushed chilli garlic ginger
  5. 1 tspsalt
  6. 1 tspchilli powder
  7. 1 tspturmeric powder
  8. 1 tbspcoriander powder
  9. 3 tbspfreshly chopped coriander
  10. 1 tbsplemon juice
  11. 1 tspsugar (optional)
  12. 1 tbspoil
  13. 1 tspmustard and cumin seeds
  14. 1/2 tspAsafoetida
  15. 1red dry chilli
  16. 7-8curry leaves
  17. 1/8 cupwater

Steps

25 minutes
  1. 1

    Boil the water.
    Add the sprouts and blanch for at least 5-7 minutes,then transfer in the strainer to discard the water.
    Keep aside.

    Add oil in a pan and add mustard cumin seeds to splutter,then add asafoetida,dry chilli and Curry leaves.
    Now add crushed chilli garlic ginger,saute for a minute,then add chopped onion together with salt,saute till onion gets softer.

    Now add chilli coriander and turmeric powder,mix with the Tadka.
    Time to add Blanchard sprouts, Fresh coriander,sugar and lemon juice with the water.
    Mix gently so as not to break the sprouts.
    Cook for 2-3 minutes then switch off the heat.

    Yummy masala sprouts mung is ready.
    Transfer in the bowl.
    Sprinkle coriander and serve hot
    Enjoy with chapati and rice or all alone.
