Baingan bharta with spring onion

Wash and make slits on egg plant, place garlic pods, grease with oil. Wash chopped spring onion.

Grease tomatoes too. Place stand on gas stove. Place baingan, tomatoes and green chillies on the stand.

Flip and roast. It takes 7 to 8 minutes. Remove eggplants, tomatoes and green chillies on plate.

Let it cool down. Start peeling. Peel tomatoes too. Mash it.

Heat oil in a kadai, add cumin seeds, asafoetida and white part of spring onion, add roasted green chillies, grated ginger.

Add salt and saute it well for 5 minutes. Add roasted, mashed baingan and tomatoes. Add red chilli powder, cumin coriander powder.

Add garam masala and green part of spring onion. Mix it well.,

Add green garlic, saute it for 5 minutes. When oil releases from kadai baingan bhartha with spring onion is cooked.

Serve hot with Bajra rotla.
