  1. 3large eggs
  2. 2scallions
  3. 1 tablespoonmayonnaise
  4. 1/2 teaspoonsea salt
  5. 1/4 teaspoonwhite pepper

    Prepare all the ingredients.

    Wash the scallions and slice them thinly.

    Crack the eggs into a bowl. Add the mayonnaise, sea salt, and white pepper. Whisk until well combined. Adding mayonnaise to the eggs makes the omelet extra smooth and tender.

    Add the sliced scallions to the egg mixture and mix well.

    Heat a skillet over medium heat and add vegetable oil. Pour in the egg mixture. As the eggs start to set, gently stir the mixture.

    Cook until there is no more runny egg, then remove from heat.
