14 mini pizzas
  1. 1light mozzarella cheese
  2. 1 sheetlight round puff pastry
  3. as neededTomato puree,
  4. as neededFine salt,
  5. as neededBlack pepper,
  6. as neededOregano,
  7. as neededOlive oil,
  8. Tools
  9. 1baking sheet
  10. 1cutting board with knife
  11. 1tablespoon
  12. 1fork
  13. 1 (2 3/4 inch)(7 cm) round cookie cutter
  14. Storage
  15. It's best to enjoy these light puff pastry mini pizzas fresh

Steps

10 minutes prep + 15 minutes cooking
  1. 1

    Remove the puff pastry from the fridge and let it sit at room temperature for 2-3 minutes. Unroll it, keeping the parchment paper underneath, and use a round cookie cutter to cut out 14 circles. Poke the center of each circle with a fork, then remove the excess dough.

    Use a spoon to spread tomato puree over the center of each circle where you poked holes, then add salt, pepper, oregano, and finally a drizzle of olive oil.

    Bake in a preheated oven at 400°F (200°C) for about 10-12 minutes. Remove the baking sheet with the mini pizzas from the oven, add a bit of mozzarella cut into small cubes, and bake again for 4-5 minutes (baking time may vary depending on your oven). Remove from the oven, let cool for a few minutes, and serve. Delicious hot or cold, however you prefer!
