A recipe made in the festival of kites🪁🪁 to celebrate the new harvest of different grains. It also combines the winter vegetables to make a perfect blend of taste and health.
Steps

Wash and soak brown chana rangooni vaal and bajra for 8 hours. Soak rice, dals and daliya for 5 hours.

Boil the chana and rangooni vaal separately with some salt in cooker. Drain and keep aside. Boil moong ang groundnuts with some salt in an open pan.

Also boil the peas, pigeon peas and papdi beand with some salt in an open pan. Drain and keep aside. Also boil rice, dals and daliya with salt and haldi with 4 cups wayer to 4 whistles.

Keep all vegetables and other ingredients ready. Also keep khada masalas and dry masalas ready.

In a big kadhaai take 3 tbsp ghee. Add rai. When it splitters add in jira, khada masalas, ajwain and hing.

Now add in chopped potatoes and carrots. Add salt and cover and cook until done. Add in cashew,badam and kishmish. Add in gg paste and dry masalas and mix for 1 minute.

Now add in boiled brown chana, rangooni vaal, moong,, peas, pigeon peas and papdi beans. Mix well and add in 1/2 cup hot water. Mix and bring to boil. Add in the boiled rice, dals and daliya.

Mix and cover and cook for 5 minutes on slow gas. Meanwhile, prepare the final tadka with ghee, jira, hing. Switch off gas and add in chilli powder.

Serve hot khichdo and drizzle final tadka on top.
