In a medium, fairly deep skillet, sprinkle in some salt and melt a good amount of butter over medium heat.
Toast the slice of sandwich bread in a toaster until golden brown.
In a bowl, crack four eggs, grate the Emmental cheese, and whisk everything together quickly. - 2
Take some green peas out of the freezer.
Place the toasted bread in the skillet, then pour in the egg and cheese mixture. Place the goat cheese and garlic and herb cheese on top of the bread. Cut the blue cheese into pieces and scatter them over the forming omelette. - 3
Sprinkle the green peas over the top. Let cook for about five minutes, occasionally loosening the edges. Lift the omelette to let any excess liquid run underneath, then carefully fold one third of the omelette over.
It's time to serve and enjoy.
