Gawar aani Batata Upkari

I learnt this recipe from my grandmother. It is a traditional Maharashtrian recipe which is flavourful and gives you the taste of gawar beans aka cluster beans.
They are rich in calcium, protein, potassium, iron and B complex. Good for bones, hair and weight management This recipe is a simple yet totally delicious stir fry and semi dry subji which goes so well with rice/ chapati or paratha.

First, keep all the vegetables and masalas / seasonings ready. Parboil the gawar beans and potatoes in 1 cup salted water till just soft but not mushy. Then heat oil in a kadhai.

Pop mustard seeds and cumin seeds. Then add hing, curry leaves and stir well. Saute the onions, chill, garlic and ginger paste well till aromatic.

Then add the parboiled vegetables and mix well. Cook for 2 minutes. Then mix all the spice powders in 2 tablespoons of water and add to the vegetables. Cook covered.

Then add salt, jaggery powder and finish with garam masala powder. Mix and remove from heat.

Mix the lemon juice and garnish with chopped coriander leaves. Serve delicious Gawar aani Batata Upkari with bhat, poli and enjoy.
