Inside-Out Enchiladas

Make the salsa: Combine 5 tomatillos, a piece of onion, 1 clove of garlic, a small piece of jalapeño (for flavor without too much heat), and 1 teaspoon of chicken bouillon powder. Boil until soft, then blend until smooth. Pour into a saucepan and stir in chopped cilantro.

Fry as many tortillas as you need for the number of enchiladas you want to make.
Next, use a very thin piece of beef steak. I used thinly sliced steak and cut each piece into 4. Grill the steak on both sides, then place it on a plate. Dip a tortilla in the salsa, place it on top of the steak, and roll it up like a taquito. Repeat with the remaining tortillas and steak.

Top with more salsa and some fresh cheese if desired. Enjoy!
