  1. 5tomatillos
  2. 1small piece of onion
  3. 1 clovegarlic
  4. 1small piece of jalapeño pepper
  5. 1-2 sprigscilantro
  6. 1 teaspoonchicken bouillon powder
  7. 4corn tortillas
  8. 1thin beef steak (such as top round or sirloin, pounded thin)
  9. enough oil for frying
  10. fresh cheese (optional)

    Make the salsa: Combine 5 tomatillos, a piece of onion, 1 clove of garlic, a small piece of jalapeño (for flavor without too much heat), and 1 teaspoon of chicken bouillon powder. Boil until soft, then blend until smooth. Pour into a saucepan and stir in chopped cilantro.

    Fry as many tortillas as you need for the number of enchiladas you want to make.

    Next, use a very thin piece of beef steak. I used thinly sliced steak and cut each piece into 4. Grill the steak on both sides, then place it on a plate. Dip a tortilla in the salsa, place it on top of the steak, and roll it up like a taquito. Repeat with the remaining tortillas and steak.
