Start by adding paneer cubes with salt, turmeric powder, pepper powder, chaat masala, yogurt, and gram flour. Mix well so all pieces are coated.
Cover and refrigerate for 10 minutes. - 2
Make a puree from tomatoes and onion-garlic paste. Heat oil in a pan and add cumin seeds, cloves, cinnamon, and dry red chillies. Once they splutter, add the puree and cook for 5–7 minutes until oil begins to separate.

Add turmeric, red chilli powder, cumin powder, salt, and hing. Mix well. Add crushed kasuri methi and stir.

Heat some oil in a separate pan. Take out the marinated paneer and shallow-fry until golden on all sides.

Add the fried paneer to the prepared gravy. Stir gently and cook for 2–3 minutes. Finish with a spoon of butter on top.
