Ghee Rice is an emotion! Making perfect ghee rice should be a backpocket recipe that you can pull out every time you have guests or just want to add some oomph to a simple meal called Nei Choru.
It is one of the simplest dishes to make, but the texture of every grain and the taste of aromatic ghee in every bite will give you so much satisfaction!

Ingredients

15 minutes
2 serves
  1. 1 cupBasmati Rice (as I didn't get originally Malabar Rice)
  2. 2 cupswater
  3. 4 tbspGhee
  4. 1Onion, cut it in julians
  5. 1Onion, finely chopped
  6. 3 tbspfinely chopped coriander
  7. 8-10cashew halves
  8. 1 tbspRaisins
  9. 1 tbspchilli garlic ginger paste
  10. 1 tspsalt
  11. 1 tspCumin seeds
  12. 4peppercorns
  13. 4cloves
  14. 1Star anis
  15. 1cinnamon stick
  16. 1bay leaf
  17. 4-5curry leaves
  18. Yoghurt as required

Cooking Instructions

    Wash and soak the rice for 10 minutes.julienne cut and fine chop the onions. Add 1 tbsp Ghee in a pan and roast the cashews and raisins. Keep aside.Add more ghee in a pan and saute Julienne onion till crispy.keep aside.

    Now add required ghee in a pan.add Cumin seeds,bay leaf, cinnamon stick, peppercorn, cloves, curry leaves, chopped onion, chilli, garlic ginger paste and saute everything well. Discard the water from the rice and add them in the pan and saute for a minute.

    Now add salt, 2 cups of water and 1 tbsp of fresh coriander,mix it and cover the pan and let the rice cook on a slow flame. When rice cooks well,stir gently with adding more coriander and switch off the gas. Let it sizzle for 5 more minutes

    Serving Time... Transfer the Ghee rice in a plate. Garnish with crispy onion, fried cashews, raisins and Fresh coriander. Yummy Kerala Ghee Rice is ready to eat. Serve with a bowlful of yoghurt. Enjoy..

    You will not believe It was soo Yummy that I finished 3/4 of the rice with yoghurt. Thank you Kerala and ms. Roslyn John for the lovely recipe.😋🫶
