Try this Veg Quinoa Khichdi with Paneer — packed with protein, fiber, and color. A warm, one-pot meal perfect for healthy dinners

Wash the quinoa and moong dal thoroughly and soak them for 10–15 minutes.
Heat ghee or oil in a pressure cooker. Add cumin seeds and hing.
Add ginger and chopped tomato(if you wish to, I have skipped). Sauté for a minute.Add chopped vegetables and turmeric powder. Stir well.

Now add the soaked moong dal and quinoa. Sauté for 2–3 minutes.
Add salt and water. Mix well.Close the lid and pressure cook for 2–3 whistles on medium heat.

Once the pressure releases, open the lid and stir the khichdi gently.
Add paneer cubes, mix lightly. Let it sit for 2–3 minutes so paneer absorbs flavor.
Garnish with fresh coriander and serve hot.
