Ingredients

1 serving
  1. 1 cupripe honeydew, diced
  2. 11⁄2 ounces mezcal
  3. 3 slicesfresh jalapeno, seeded
  4. 1⁄2 ounce agave syrup
  5. pinchsalt
  6. 3 ouncestxakoli wine
  7. ice
  8. for garnish, mint

Cooking Instructions

    Juice the Melon:
    Blend the diced honeydew until smooth, then strain through a fine mesh sieve. Set aside 2 oz of the juice for the cocktail.

    Muddle the Jalapeno:
    In a shaker, add the jalapeño slices and agave syrup. Muddle gently to release the flavor.

    Build and Shake:
    Add mezcal, honeydew juice, lime juice, and a pinch of salt to the shaker. Fill the shaker with ice and shake hard for about 15 seconds until well chilled.

  4. 4

    Strain and Serve:
    Strain into a chilled highball glass over fresh ice. Top with txakoli wine. Add a sprig of mint for garnish. Serve immediately.
