Here’s a salmon or pollock carpaccio, where the fish is sliced while frozen to get thin slices.

Using an electric slicer, thinly slice your frozen salmon or pollock fillet until you reach the skin.

In a bowl, whisk together the olive oil and lemon juice. Add a pinch of salt and pepper, then the dill, garlic powder, and a few drops of Maggi seasoning. Using a brush, coat the fish slices with this marinade.

Sprinkle with parsley and dill. Cover with plastic wrap and refrigerate until ready to serve. Just before serving, sprinkle with a little flaky sea salt.

This version uses pollock fillet.
