Today is August 15th, so I made tricolor parathas and served them to everyone at home for breakfast.
Steps

First, wash and dry the coriander, capsicum, tomatoes, carrots, raw mango, and beetroot thoroughly with water.

To make Green Paste :
In a mixer jar, add chopped coriander, capsicum, and finely chopped raw mango. Add cumin seeds, red chili powder, and salt. Blend well to a smooth paste (add water if needed). Transfer to a separate bowl. - 3
Making Kesari Paste :
- In the mixer jar, add tomatoes, carrot, beetroot, salt, black pepper powder, and cumin seeds. Blend well to a smooth paste and transfer to a separate bowl.

Preparing the Dough :

Now, take a bowl and sift the maida (all-purpose flour) into it. Add ajwain (crushed with your hands), black pepper powder powder, and salt to taste. Mix well.

Add 4 tablespoons of oil and 1 tablespoon of ghee for moisture, and mix well. Divide the dough into three equal parts.

Preparing the Green Dough :
Take one part of the dough and add the prepared green paste to it. Mix well and add water if needed to bind the dough. Cover and let it rest for 10 minutes. - 8
Preparing the Kesari Dough : Take another part of the dough and add the prepared tomato puree to it. Mix well and bind the dough. Cover and let it rest.

Preparing the White Dough :

Take the third part of the dough and add water gradually to bind it into a smooth dough. Cover and let it rest for 10 minutes.
After 10 minutes, knead all three doughs with oiled hands and divide them into equal portions. Keep them separate. - 11
Assembling the Tricolor Paratha :
Now, take each portion and roll it into a long rope. Place the green, white, and orange ropes side by side, and join one end of all three ropes together. Roll them into a cylindrical shape and press the other end to seal it. Dust with dry flour and roll out into a paratha. - 12

Now, take each portion and roll it into a long rope, one after the other - first green, then white, and finally orange. Place them side by side and join one end of all three ropes together. Roll them into a cylindrical shape and press the other end to seal it. Prepare a smooth ball, dust with dry flour, and roll out into a paratha. - 13
Heat a tawa, apply oil, and cook the paratha on both sides until it's nicely cooked.

Serving the Tricolor Paratha :
I have rolled out the tricolor paratha into round and triangular shapes, cooked them, and served with ghee.
Serve the hot tricolor paratha with ghee.
