Kumbhaniya bhajiya is a famous street food from the city of Surat. It is prepared using lots of coriander leaves, green garlic, fenugreek leaves and green chillies. It has more greens than the gram flour and that is the reason it becomes really crispy and tasty. This bhajiya tastes delicious even when it gets cold. It is usually served with onion and fried green chillies and it really tastes delicious with a cur of hot coffee or tea.

First of all, finely chop all the green ingredients and prepare them. Grate the ginger. Now wash and drain both the leafy vegetables. Take onion, garlic, ginger and chilli in a mixing bowl with both the green vegetables.

Now add salt, pepper and lemon juice and mix well with your hands. Add gram flour and mix. If required, add 2-3 spoons of water to make a stiff batter.

Heat oil in a pan and add 1 teaspoon of oil to the batter. Now keep the gas flame on medium and with the help of your fingers and thumb, drop small sized bhajiyas from the batter into the oil.

Fry the Kumbhnia Bhajiya till crisp and golden. Delicious Kumbhnia Bhajiya is ready, serve it hot with chopped onions and chutney.
