Ayam Paprik is a popular Malaysian spicy stir-fry dish made with a variety of vegetables and chicken. Tender pieces of chicken are cooked over high heat with a blend of spicy chili paste, vegetables like onion, green beans, carrot, and bell peppers. We added peas and sweet corn for extra veggies. It’s usually served with steamed white rice, but we prefer udon (wheat) noodles, which we love.

Ingredients

Prep 20 min – Cook 15 min
Serves 6 servings
  1. 2 tablespoonsoil
  2. 4garlic cloves, minced
  3. 2chicken breasts (4 fillets), sliced into thin strips
  4. 1onion, cut into chunks
  5. 2 cupsfrozen peas (about 280 grams)
  6. 2carrots, julienned
  7. 1green bell pepper, seeded and roughly chopped
  8. 2red bell peppers, seeded and roughly chopped
  9. 1 package(5 oz/140 grams) sweet corn
  10. Bird's eye chili peppers, lightly crushed (optional, as many as you like)
  11. 2 tablespoonsThai chili paste, nam prik phao (or 1 tablespoon gochujang)
  12. 4 tablespoonssweet soy sauce (kecap manis)
  13. 2 tablespoonsfish sauce

Steps

Prep 20 min – Cook 15 min
  1. 1

    Gather your ingredients and slice the chicken into thin strips.

    Cut all the vegetables as directed and prepare your sauce.

    If you don’t have sweet soy sauce (kecap manis), you can substitute it with: kecap manis = 1 tablespoon dark soy sauce mixed with 1 tablespoon palm sugar or brown sugar (1:1 ratio).

    1. In a small saucepan, combine equal parts soy sauce (regular or Japanese) and sugar, and simmer while stirring.
    2. After 5-10 minutes on low heat, the mixture will thicken to a syrupy consistency.
    3. Store in the refrigerator for up to a month in an airtight container.

    Heat a wok over high heat and add the oil.

    Add the garlic to the wok and sauté until fragrant.

    Next, add the Thai chili paste (nam prik phao, gochujang, or another chili paste).

    Add the chicken and stir-fry quickly until browned.

    Meanwhile, cook the noodles you’ll serve with the chicken.

    Next, add the onion,

    ...the green and red bell peppers, carrots, and (optional) bird's eye chilies, stirring to combine well with the chicken.

    Add the peas and

    ...stir to mix well.

    Now add the sweet soy sauce and fish sauce.

    Finally, add the sweet corn (pre-cooked), and stir until everything is heated through.

    Once the chicken is cooked and all ingredients are ready, serve immediately with steamed rice or the noodles you cooked while stir-frying the chicken and vegetables.
