Peel the shallots.

Peel the garlic.

Slice the chicken breasts into strips.

Chop the shallots and garlic, then mince them very finely. Place in a large bowl.

Add both mustards.

Add the honey and squeeze in the lemon juice.

Add the lemon juice, paprika, Espelette pepper, and oregano.

Mix well, then add the chicken.

Stir to coat, cover, and let marinate in the refrigerator for 3 hours.

Pour the chicken stock into a bowl.

Add the heavy cream, season with salt and pepper.

Mix well and set aside. Preheat the oven to 400°F (200°C). Peel the potatoes.

Wash the potatoes and cut them into sticks using a mandoline.

Peel the red onion.

Thinly slice the onion. Rinse and dry the cilantro.

Chop the cilantro. Place the potatoes in a baking dish.

Add the onion and two-thirds of the cilantro.

Mix, then add the bowl of stock and cream. Mix again.

Top with the marinated chicken and its marinade.

Bake for 1 hour and 10 minutes, turning the chicken pieces halfway through.

Sprinkle with the remaining cilantro when you take it out of the oven.
