Ingredients

  1. 200 gSurti colum rice (pre-cooked)
  2. 150 gChilled yogurt
  3. 1 tbspOil
  4. 1 tspUrad dal
  5. 1/2 tspMustard seeds
  6. 4Curry leaves
  7. 1, finely chopped Green chillies
  8. 1 pinchHing (asafoetida)
  9. 4 piecesCashews
  10. 1tsp, finely chopped or grated Ginger
  11. 3tsp, grated Cucumber
  12. 3tsp, grated Carrot
  13. to taste Salt
  14. 1tbsp, chopped Cilantro
  15. 2 tbspPomegranate arils

20 minutes
  1. 1

    Cook soft rice like creamy texture. Add salt in chilled curd, mix well.

    Heat oil in a pan, add urad dal and mustard seeds. Let them splutter. Add curry leaves, green chillies, hing, cashews, and ginger. Sauté until cashews are golden.

    Pour the tempering over the pre-cooked rice. Add salt and chilled curd, mix well. Add grated cucumber, grated carrot. Mix well until creamy.

    Sprinkle cilantro, pomegranate arils. Chill in the fridge for a few minutes before serving.
