Cook soft rice like creamy texture. Add salt in chilled curd, mix well.

Heat oil in a pan, add urad dal and mustard seeds. Let them splutter. Add curry leaves, green chillies, hing, cashews, and ginger. Sauté until cashews are golden.

Pour the tempering over the pre-cooked rice. Add salt and chilled curd, mix well. Add grated cucumber, grated carrot. Mix well until creamy.

Sprinkle cilantro, pomegranate arils. Chill in the fridge for a few minutes before serving.
