Clean the fillets and cut them into strips about 2 inches long by 1/2 inch wide. Add lime juice and salt, and let marinate for at least one hour in the refrigerator.

Blend the achiote, orange juice, and garlic very well in a blender.

Remove the fillets, drain them, add lime juice to the blended mixture, and blend again. Coat the fillets and refrigerate again.

In a non-stick pan, add a couple of tablespoons of oil and fry the drained fish. Once fried, place on paper towels to absorb excess oil.

Serve with tortillas, lettuce, cilantro, onion, and your favorite salsa.
