Ingredients

12 servings
  1. 2large apples
  2. 2 Tbspgolden flax meal
  3. 5 Tbspwater
  4. 2eggs
  5. 3 scoopsprotein powder
  6. 1 cupoat flour
  7. 3 packsstevia
  8. 1 cupgreek yoghurt
  9. 1/4 tspbaking soda
  10. 1/2 tspbaking powder
  11. 2 tspcinnamon

Cooking Instructions

    Core and grate the apples in a large bowl.

    Mix in flax meal and cold water.

  3. 3

    Preheat oven to 350°F/180°C

  4. 4

    Add eggs and stir until combined with apples and flax meal.

  5. 5

    Add yogurt to the bowl and stir.

  6. 6

    Mix with dry ingredients: stevia, oat flour, protein powder, baking soda baking powder and cinnamon powder.

    Pour the batter into your muffin tin. (Don't forget to grease it first or use a liner! I like to use coconut oil.)

    Bake for 25 minutes. Allow to cool for at least 10 minutes after removing from the oven.
