When I was little there was this gentleman who came by at around 3 in the afternoon with a bike that had a huge basket and was selling halouva (halva in Cypriot Greek) that was white and pink! I used to check the time like crazy each day waiting for him to pass by so I could buy rosy halouva!!! The simplest thing to make but loved as well as vegan and Lenten!

Ingredients

2 medium-sized cake molds
  1. 10 cupswater 
  2. 2 cupssemolina 
  3. 2 cupssugar 
  4. 50 mlvegetable oil (optionally) 
  5. 50 mlrose water 
  6. 4-5 tbsprose syrup

Steps

  1. 1

    Place the water, the semolina and the sugar (the vegetable oil as well, if you are using any) in a pot over strong heat and stir until it thickens. 

  2. 2

    When it thickens remove from heat and pour in the rose water stirring continuously. 

  3. 3

    Finally, pour in the syrup to make the halouva pink and give it a rose fragrance. 

  4. 4

    Place the mixture in a cake mold and then in the fridge to cool. 

  5. 5

    Remove from mold and it is ready.
