Ingredients

Serves 2 servings
  1. 1large chicken breast
  2. 2 tbspsoy sauce
  3. 2 tbspoil
  4. 1 clovegarlic, finely chopped
  5. 1 tbspfresh ginger, finely chopped
  6. 1carrot, small diced
  7. Handfulgreen beans
  8. Halfred pepper
  9. 2rings of pineapple, small diced
  10. Handfulmangetout
  11. 50 gsweetcorn
  12. 65 gbrown rice

  1. 1

    Toss the chicken in some salt and pepper to season then let marinade in the soy sauce and set aside.

  2. 2

    Heat 1 tbsp of the oil in a frying pan over a medium heat

  3. 3

    Add in the garlic and ginger, cooking for 1 minute until softened

  4. 4

    Add the rest of the oil to the pan with the chicken pieces and cook until sealed on all sides

  5. 5

    Add the carrot, pepper and green beans and cook a further 2 minutes until the chicken is browning before adding mangetout, sweetcorn, pineapple and cooked rice

  6. 6

    Drizzle fresh soy sauce over, stir through then serve
