Spinach Artichoke Dip

Ingredients

  1. 8 ozSoftened Cream Cheese
  2. 1 canArtichokes, drained and chopped
  3. 1 boxFrozen spinach, thawed, microwaved and drained
  4. 4 cloveGarlic, chopped
  5. 1/3onion, chopped
  6. dashRed pepper flakes
  7. dashSalt & Pepper
  8. 1A palmful of real crumbled bacon
  9. 1/2 cupShredded parmesan cheese
  10. 1/2 cupGrated monterrey jack cheese
  11. 2 tspolive oil
  12. 1pad of butter
  13. 1/2 cupmayonnaise, not miracle whip.

Cooking Instructions

    Microwave and drain spinach. Make sure to ring out spinach. Preheat oven to 350.

    Chop onion and garlic, sautee in olive oil and a pad of butter, add a dash of red pepper flakes. Cook until onions are soft. Let cool.

    Soften cream cheese and mix in spinach

  4. 4

    Cut up artichoke hearts and add into cream cheese mixture

  5. 5

    Add onion mixture, both cheeses, bacon, mayo into cream cheese mixture.

    Butter a small casserole dish and add all the mixture into the dish. Bake at 350 for 20 mins. Top with leftover cheese and bake for another 5 mins until cheese is melted.

    Eat with your favorite corn chips.
