Mexican Spice Salad

We love Mexican food at my house. However, the typical sides of beans & rice sometimes left us feeling some guilt from eating so few vegetables with dinner. This side incorporates lots of veggies & tons of Mexican flavor. Without all the guilt. If you are really watching your waist try reduced fat sour cream or plain yogurt.

In a moderately sized mixing bowl combine the tomatoes, onion, peppers, cilantro & a small pinch of sugar. Allow to rest for 15 minutes.

Add the sour cream, garlic powder, chili powder, cumin, lime juice, salt & pepper. Stir to mix together. Chill for another 15 minutes. Stir again just before serving.

Can be made up to a day ahead. If the stored salad's dressing separates, add another tablespoon or two of sour cream & stir together.
