My Mother-in-law was an amazing cook, through the years I would ask her to share her recipes with me and she always would say there is nothing to it and tell me the ingredients. With this recipe she gave me a pen & paper, opened her recipe book and shared. Momma Barrett passed in February. Friends, I'm sharing this recipe in her Honor. I hope you enjoy it as much as we do.

Momma B's Sweet Potato Casserole

Ingredients

8 servings
  1. casserole
  2. 2 1/2 cupsweet potatoes (baked & mashed)
  3. 1 1/4 cupgranulated sugar
  4. 1/2 cupwhole milk
  5. 2eggs
  6. 4 tbspbutter (melted)
  7. 3/4 tspground cinnamon
  8. 1/4 tspground nutmeg
  9. topping
  10. 3/4 cupground corn flakes
  11. 1/2 cupground pecans
  12. 1/2 cupbrown sugar
  13. 5 tbspbutter(melted)

Cooking Instructions

  1. 1

    Bake & mash sweet potatoes. Preheat oven to 400degrees.

    Add casserole ingredients to sweet potatoes and mix.

  3. 3

    Butter a 8x8 baking dish. (Tip I use the butter paper) add the casserole ingredients and bake for 30 minutes.

    With a spoon mix the topping ingredients.

  5. 5

    After 30 minutes remove casserole from oven and add the topping. Return to oven and bake for 10 minutes.

    After 10 minutes remove from oven. This is a great make ahead dish for the Holidays because it's actually better the next day.Just refrigerate bring to room temperature and reheat before serving. Hope you enjoy!
