I wanted to give "mozzarella sticks" a try but with lactose free cheese shreads. and decided to use tofu as a base instead of creamcheese.. as i use tofu as a base in alot of my recipes. this is lactose intollerant friendly :D

Ingredients

  1. bunchJalapeño Peppers
  2. earthbalance vegan butter
  3. For The Stuffing
  4. 1 packagesMelissa's Extra firm Tofu
  5. 1 packagesGo Veggie brand mozzarella flavor shreads (lactose free)
  6. smallhandful Soy bacon flavor bits
  7. 1/2 cupvegetable broth
  8. 2 tbspreallemon juice
  9. 1/2 tspHabanero powder, OR, 1 habanero pepper
  10. Greek seasonings
  11. For the Breading
  12. bunchflour
  13. eggs (use as much as needed to conplete)
  14. 1 boxCrackers

Steps

  1. 1

    Tofu prep: Drain. slice. press tofu for 45 minutes. (to drain excess water out).

    In blender - blend tofu, cheese shreads, soy bacon bits, vegetable broth, lemon juice, greek seasonings, and habanero (if using pepper blend now/if using powder you may mix in with whatever step is easiest.)

    Wash, slice and deseed jalapeño peppers

    Fill Jalapeño halves with the stuffing mix.

    Mill crackers to a fine powder. Set in container for next step

  6. 6

    In bowl 1: dip the stuffed peppers with flour. Then in bowl 2: dip them into the egg. Last in bowl 3: roll them around in the cracker crumbs

  7. 7

    in pan on medium heat add earth balance. put stuffed peppers in pan and warm until stuffing oozes out slightly flipping peppers to evenly heat.

The stuff i cook is vegan, and do substitute to what i eat, because of allergies etc some may be old. i am on a rx meal plan not allowed to use food with lactose/treenuts.
