Baingan aloo (eggplants and potatoes)

Heat the oil in a kadhai. add mustard seeds, cumin sheed, garlic, and onion till saute. now add potatoes cubes, turmeric powder, red chilli powder,green chilli, and coconut powder mix well and saute. cover and cook for 6-7 minutes over medium heat.

Add the baingan in kadahi. cover and cook for another 5 minutes. add around 2 cup water mix well and add salt, tamarind pulp and garam masala powder. stir nicely, cover and cook let the potatoes and eggplants cook over a medium- low-heat. add little water if required, stir occasionally.

Once potatoes and eggplants is cooked. then add peanut powder and boil for couple of minutes. Serve hot with chapati and rice.
