Ingredients

15 minutes
2 servings
  • 1 lbboneless skinless chicken breasts cut into 1/4 inch thick slices
  • 1 1/2 tbspcajun seasoning spice mix
  • 1 tbspblack pepper
  • 2 tspgrated Parmesan
  • 2shallots, finely chopped
  • 2garlic cloves, minced
  • 1/2 cupdry white wine
  • 1/2 cupchicken broth
  • 1/2 tbspfresh lemon juice
  • 1/4 cupheavy cream, light cream or half and half can be substituted
  • 1/4 tspDijon mustard
  • 1 Tbspfresh parsley chopped
  • 1 cupfresh grapes, I used red grapes, but green are also good as well. If you like you can cut grapes in half
  • 1 tbspbutter, salted or unsalted
  • 1 tbspolive oil
  • salt and pepper

Steps

15 minutes
  1. 1

    In a small bowl combine cajun seasoning, black pepper and parmesan cheese. Mix well.

    Toss chicken with spice mIxture in a bowl.

    Heat oil and butter in large skillet, add seasoned chicken in one layer, do not crowd. Cook about 3 minutes on each side until cooked through.

    Transfer chicken to a plate as done. Into skillet add shallots and garlic. Cook for 1 minute to soften. Add wine and reduce until almost gone. Add broth and lemon juice,simmer 2 minutes.

    Add cream and mustard, bring to a simmer and cook until thickened.

    Add grapes and parsley and heat through. Taste sauce and add salt and pepper if needed.

    Serve sauce on chicken.

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
