Ingredients

  • 3/4 cupBrown Rice, cooked
  • 2/3 cuponion, chopped
  • 1/2 cuptomato, chopped
  • 3/4 cupbeef chorizo
  • 2eggs
  • 3 tbsplemon pepper
  • 3 smallsprigs of cilantro

Steps

20 mins
  1. 1

    In medium saucepan place chorizo on medium heat

  2. 2

    Cook for 5 minutes

  3. 3

    Add diced onion

  4. 4

    Cook for additional 2 minutes

  5. 5

    Add tomato and rice

  6. 6

    Cook an additional 4 minutes

  7. 7

    Add egg

  8. 8

    Cook an additional 5 minutes

  9. 9

    Turn off flame

  10. 10

    Add lemon pepper

  11. 11

    Place chorizo on plate and garnish with sprigs of cilantro

  12. 12

    Enjoy!
