A perfect recipe to play with. Have fun with it and create something to suit the type of meal you want. Serve with rice and veggies or over linguini to make a saucy love affair.
Cooking Instructions

Dice shallots, garlic and red pepper.

Heat oil in heavy pan. Season both sides of salmon with salt and pepper.

Crisp salmon on medium high heat for 3 minutes a side.

Add in Shallots, garlic, red pepper, dill, parsley and lemon zest. Season with pepper. Cook for another 3 minutes.

Add wine, chicken broth and lemon juice. Reduce.
- 6
Add cream and cook until thick. Few minutes.
- 7
Serve over pasta or eat as is.

At the market, the tomatoes are starting to look pretty good, so I picked up a few. I was in the mood for salmon and got a small tail-end fillet chunk. The salmon set me thinking that dill might work with tomatoes. I'm not sure why I thought to brown the butter, but it makes sense in hindsight. There was an element missing, so I found some Greek yogurt in the fridge and added dill, but it was lacking. Tried salt and pepper. There was a definite improvement, but not quite there. A touch of horseradish sealed the deal. It made sense to use the, "tomato story," bowl I got at Daiso, a Japanese dollar store near my house. Pretty satisfied with the results overall. The salmon head and trimmings make bouillabaise soup, recipe in here. Salmon tail meat is a culinary feast, stays crispier than salmon filets. Only 15 minutes to cook.
