Boil eggplant till soft

Take out the skin and mash ut properly

Chop onion ginger garlic and tomato separately

Heat oil in pan and add onion saute for few minutes and then add ginger garlic and green chilli

Add tomatoes and salt and cook till it's soft

Now add mashed eggplant cook till it leaves the sides

Garnish it with chopped coriander

For methi kachori

Chop the fresh methi finely and add all the ingredients together and combine to form a dough

Make small kachori and deep fry them till golden from both the sides
