Ingredients

  • 2 cupRed kidney beans soaked overnight
  • 1 cupGrated khoya
  • 1 tbspChopped ginger
  • 1 tbspchopped garlic
  • 1 tbspchopped green chilli
  • 4-5cloves, 2/3black cardamom,
  • 2 tbspkhaskhas(poppy seeds)
  • 1 tbspchirongi or sunflower seeds
  • 1 tbspcashew nuts
  • 2 tspcaraway seeds
  • 1 tspwhite pepper powder
  • leavesRoughly chopped mint
  • as tasteSalt
  • To SMOKE KABAB MIX
  • 1 piece red hotCharcoal
  • 2/3cloves,
  • 1/2 inch whole piece, asafoetida
  • 1/2 tspghee

Steps

  1. 1

    Wash the beans and soak over night boil with salt, drain extra water & set beans to cool

  2. 2

    Take a pan roast all dry ingredients and grind them

  3. 3

    Now in a pan put one tbsp ghee put chopped ginger, garlic, chilli, caraway rosy for 2/3 mint now add khoya and rajma roast for 4/5 mint

  4. 4

    Let it cool, then grind the mixture now add lemon juice & white pepper powder now add all grinded dry mixture put mint leaves also

  5. 5

    To smoke kabab

  6. 6

    Put all mixture in a bowl make a well in centre put the red hot charcoal piece in a small bowl now put this bowl in in a Center of dough now put clove, hing and ghee immediately cover with large bowl set aside for 3 mint

  7. 7

    Now grease your hand take a mixture of kabab make a equal ball & flattern them slightly

  8. 8

    Heat the ghee and shallow fry all kababs

  9. 9

    Arrange all in platter sprinkle chat masala and serve with mint chutney

  10. 10

    Put all mixture in a bowl
