Make a batter with flour, eggs and salt. Dip shrimp in batter one at a time. Fry in hot cooking oil for a few minutes. Remove and drain in absorbent paper.

In frying pan, saute garlic and onions until golden brown. Return shrimp to the pan, add pineapple chunks, sweet pickles, pepper, carrot and broth. Cover and cook for 10 minutes over low medium heat.

Prepare "sweet and sour" sauce and pour in the pan. Let boil uncovered for 5 minutes. Thicken with cornstarch.

Serve hot. Share and enjoy.
