Ingredients

  • 8 oznoodles
  • 1 cuppeanut butter
  • 2 3/4 tbsptoasted sesame oil
  • 3/4 cuprice vinegar
  • 2 tbspdry sherry
  • 1 cupscallions
  • 1/4 cupcilantro chopped
  • 2 tbspsoy sauce
  • 1 tbspAsian chile sauce
  • 2 headbaby romaine
  • 2red peppers
  • 1cucumber
  • 1toasted sesame seeds
  • 1 1/2 lbcooked chicken breasts sliced into 1/4 inch slices and chilled

Steps

  1. 1

    fill large bowl with ice cubes and water

  2. 2

    cook noodles then transfer to ice water

  3. 3

    whisk pb, vinegar, sesame oil, and sherry

  4. 4

    add scallions, cilantro, soy and hot sauce

  5. 5

    cut Romaine in half, notch out core, cut into 1/2 inch pieces

  6. 6

    add lettuce,chicken,peppers,cucumbers

  7. 7

    add dressing and season with salt and water to taste
