Cook bacon till its crispy, put on paper towel

Add onion and mushrooms to hot grease and cook until onions begin to brown. Add shrimp and nuts. When shrimp are pink and firm (2-4 minutes) stir in vinegar and mustard.

Divide spinach and eggs among 4 plates and top with the hot shrimp mixture, some dressing from skillet and bacon.
