Cut slits all over the roast with the tip of a knice and insert garlic slivers.

In a small bowl, combine mustard, thyme, rosemary and oil. Spread all over top and sides of the roast.

Place roast on a rack in a shallow roasting pan.

Place in 450°F oven for 10 minutes.

Reduce heat to 275°F.

Cook until thermometer reads 140°F for medium rare (about 2.5 hrs), 155°F medium (2.75 to 3.25).

Remove from oven, transfer to cutting. board. Cover with foil and let stand for at least 15 minutes..
