  1. 1 tbspOlive Oil
  2. 1 lbPork roast or chops cut into 1/2 inch pieces
  3. 1 cupChopped onion
  4. 4 cloveChopped Garlic
  5. 1 1/2 tspGround cumin
  6. 1/2 tspGround red pepper
  7. 1/2 cupBeer
  8. 2 cupLow sodium chicken broth
  9. 1/2 cupSalsa verde
  10. 1 canHominy drained
  11. 1/4 cupChopped cilantro
  12. 4Sliced radishes
  13. 1Lime cut in quarters

  1. 1

    Heat oil in a Dutch oven. Brown pork on all sides. Remove from pan set aside.

  2. 2

    Add onion and sauté 4-5 min. Add garlic sauté 1 min longer.

  3. 3

    Return the pork to pan. Add cumin, pepper, beer, broth, salsa and hominy. Bring to boil. Cover. Lower heat to simmer for at least 1 hour or until pork is tender.

  4. 4

    Add cilantro and Radishes. Stir in and let set for 5 min.

  5. 5

    Serve in bowls with a lime wedge garnish.
