Makai ka kees is from Madhya Pradesh where it is also called, ‘makai ke kan’ (fresh corn grits) .Makai ka kees literally translates to grated fresh corn, which is cooked with a light spices and some milk to get a creamy yet light texture. Corn is nutritious, providing fiber, which aids in digestion, plus folate, thiamin, phosphorus, vitamin C, and magnesium.

Ingredients

15 minutes
4 servings
  • 2Sweet Corn Cobs peeled
  • 1/2 cupMilk
  • 2Green Chillies
  • 1/2 tspGrated Ginger
  • 1/2 tspMustard Seeds
  • 1/2 tspCumin Seeds
  • 1/4 tspTurmeric Powder
  • 1big pinch of asafoetida/hing
  • 2 Tboil
  • 2 Tbfreshly grated coconut
  • handfulchopped coriander leaves
  • to tastesalt
  • juice of half lemon

Steps

15 minutes
  1. 1

    Grate or grind the corn into a coarse paste and set aside.

  2. 2

    Heat oil in a heavy bottomed pan. Add the mustard seeds and cumin seeds and let them splutter.

  3. 3

    Then add the asafoetida/Hing,finely chopped green chillies and grated ginger and stir for a few seconds.

  4. 4

    Now add the grated corn and turmeric powder and mix

  5. 5

    Fry until the color changes slightly.

  6. 6

    Now add the milk to it and combine well.

  7. 7

    Cover the pan with a lid and let it cook on a low flame

  8. 8

    Cook until all the milk evaporates and the mixture thickens.

  9. 9

    Add the salt to it and mix well.

  10. 10

    Turn off the flame and add the lemon juice and coriander leaves. Mix well

  11. 11

    Garnish with grated coconut, coriander leaves and lemon wedges.

  12. 12

    Serve hot as a snack.
